I just whipped this up for breakfast using some of yesterday's leftovers, and I have to say I'm pretty pleased with myself.
First got some bacon going in the oven. While that was cooking, heated up about a cup and half of stuffing in a skillet with just a tiny bit of oil to keep it from sticking. When bacon was ready, chopped up a couple strips of that and mixed it in with the stuffing. Let that sit in the warm skillet for a minute or two while I quickly fried up a couple eggs over easy. The eggs went on top of the stuffing and bacon "hash", and then the whole thing got topped with a nice big dollop of red pepper spread* that I put out as an appetizer yesterday. Delicious.
* Two red bell peppers (store bought), plus one small poblano and one sandia chile (grown in pots in my backyard), roasted on the grill. Peel off the roasted skins, put in the blender with two three cloves of garlic, a couple spoonfuls of olive oil, and a tiny splash of red wine vinegar. Puree and then add salt and pepper to taste.

That 'twerk' thing made me ill. I just ate turkey leftovers for like the 8th time. It's Sunday night over here, homies, and Thanksgiving was still rocking... until the twerking turkey made it's appearance.
