All those in the USA enjoy the three day weekend. Those who are not enjoy it also. We are heading out camping with our new to us Coleman pop up camper. Have been tenting for years. Won't be roughing it quite so much. What's everyone else doing for the holidays?

Yeah, Happy Independence Day to all you Americans on here.
I fly into Salt Lake City tomorrow night and am only sorry to miss the parades and fireworks. I've been lucky enough to be in Orlando for a few 4th July's and it's hard to imagine better fireworks anywhere. Last year we caught the end of it in Flagstaff, AZ, and the difference was huge, but it was nice to see small town America in all its glory.

I've been drywalling all weekend. I'm beat, and so are my LD jeans that I've been wearing. As an FYI, if anyone's still going to do a little backyard BBQ action and want to up their smores game, swap out the standard Hershey's chocolate for a Reese's peanut butter cup. Magical.

I'm in Chicago right now and it's nice to see the Americans dressing all red, white and blue. Patriotism's sneered at in the UK media, so I always appreciate seeing it in the US.

Did the family picnic scene already this weekend. Back home and did what I enjoy (out on the mountain bike trails) and now pool side with some brews. I will sum up the 4th the best way I know how:

I did three cookouts in three days. My blood sugar's way too high, I feel bloated yet strangely hungry still. A good weekend. BTW, if you like rice krispie treats, there's a way to up that game. No, not the "just add some chocolate chips" deal. Make the krispie treat base material like you normally would, but put it in a large pan (spray the pan so nothing sticks) and then press flat. On two overlapping sheets of waxed paper, continue to flatten it into a nice rectangle maybe a 1/4" thick (thinner is better, but not too thin). Liberally spread marshmallow fluff on the top. next, spread on one of a number of additives. Fan favorites in this house are Reese's Peanut Butter spread, Hershey's Chocolate spread, or Nutella (which I don't like, so no linky). Once you've got that, roll it lengthwise into a nice long tube using the waxed paper, slice and serve. Et voila! Rice Krispie pinwheels. Pro-tip: when transporting, put waxed paper under each layer of slices so they don't stick to each other. If you cut slices and leave them in the log, it's a giant mess. For our non-US friends who try this, substitute fillings as necessary for local taste. I've wondered if putting a fruit jam in there might not be a good thing to try.

Happy Independence Day USA!! Please enjoy the Holiday but also take time to remember we are lucky to live in a great Country even with our flaws. Sorry I've been notably absent for a bit. All is well. Time is short as we all know. I will be spending more time on here catching up on the good things I might have missed.
